We've been making ice wine for more than 25 years. Building on the popularity of our Riesling, we produced our first Semillon Ice Wine in 2002 – one of only a handful ever produced in Washington State.
Mother Nature Helps
To successfully craft ice wine, we leave the grapes on the vine until they freeze. When the temperature drops below 32° F, water in the grapes freezes but sugars and other dissolved solids do not. Once pressed, the grapes yield sweet, concentrated juice and very little water.
Nectar in a Glass
The result is nectar in a glass, a complete dessert in itself, or a decadent accompaniment to other sweets. Serve Covey Run Semillon Ice Wine with fresh fruits, especially strawberries, cream-based pastries, crème brûlée and rich, creamy cheeses like Roquefort or Stilton.
