Harvest & Winemaking
Washington's 2010 vintage was quite atypical. It was challenging for both grape growers and winemakers. The cool weather in March and April delayed bud break one week later than normal. The summer months never received the blazing hot weather that is typical in Eastern Washington growing regions, so the grapes were slow to ripen. The exceptionally cool spring and summer, followed by an early fall and frost actually favored the development of our fruit for a low alcohol, spectacular, bright white wine.
Pale golden straw in color with aromas of lime bars. On the palate, lemon bars backed by a touch of minerality are highlighted by bright acid and a very clean, finish.
Food Pairing Suggestions
The Covey Run 2010 Quail Series Sauvignon Blanc pairs well with shellfish such as fresh oysters on the half shell or steamed and lightly herbed clams. Also try with brined, slow-roasted, on the bone pork shanks served with roasted vegetables, rice pilaf, or asparagus spears.
